I got this recipe from Hungry Girl, and have made it at least 10 times since I first saw it. I’ve changed some things in the recipe to make it more to my taste, but you can find the original recipe here. I love this recipe because it’s spicy, filling, and really low in Points. Plus, it’s super-easy.
Nutritionals: Per 1 cup serving: 172 calories, 3.5g fat, 5.5g fiber, 22.5g carbs, 13g protein – 3 points. I usually count it for 4 points because I use more turkey (the pkg usually has 1.33 lb) and more corn than the original recipe.
HG’s 10-Alarm Crockpot Chili
Ingredients:
1 lb. raw lean ground turkey
One 29-oz. can tomato sauce
One 14.5-oz. can diced tomatoes
One 15-oz. can black beans, drained, but unrinsed
One 15-oz. can pinto beans, drained, but unrinsed
1 cup Trader Joe’s fire roasted frozen corn (or canned corn, if you prefer)
1 small jar jalapeno peppers
2 bell peppers (in different colors), chopped
1 large onion, chopped
3-4 tsp. minced garlic
1 tsp. chili powder
1 tsp. ground cumin
2-3 Tbsp. hot sauce
1/2 oz. VERY dark chocolate (70%+ cacao), broken into small pieces
salt, to taste
Directions:
Brown the turkey in a medium pan on the stove. Drain excess fat and then add to crockpot.
Add the rest of the ingredients except for the chocolate to the crockpot. Mix well to combine. Cover and cook on high for 2 hours, and then reduce heat to low and cook for an additional 3 hours. (OR cover and cook on low for 6 – 7 hours straight.)
About an hour before the end of the cooking time, add the chocolate. Make sure to break it up into little pieces so that it can melt easily. Stir well. I know the chocolate sounds strange, but it adds a nice mellowness to the spiciness of the dish. It’s delicious.
You can add any toppings you like, but I usually add 1/4 cup of 2% shredded Mexican blend cheese.
This is the perfect meal for a winter day/evening. Its spiciness helps to heat you up, and its heartiness helps to keep you full for a really long time. I think this would be great for a superbowl party, especially because the recipe makes so many servings!
