Tonight’s recipe came straight from WW.com, although I made a few minor modifications so that it would be more to my taste. If you want to, you can check out the original recipe. I thought it sounded good because of the unusual (to me) combination of flavors. Plus, the weather is still cold, and I knew a crock pot stew would taste delicious.
Cuban-Style Pork & Sweet Potato Crockpot Stew
(I don’t have the nutritional breakdown of this recipe, but I can tell you it’s 6 Points, which is about 300 calories).
Serving size = 1 1/2 cups
Ingredients:
1 lb lean pork loin (I used pork chops)
1 lb sweet potatoes
14.5 oz canned diced tomatoes with green chiles
4 garlic cloves
1/3 cup orange juice (I used Trop50)
1 bunch green onions (I had bought two, which is why they’re both in the photo, but I only used 1 bunch)
juice from 2 limes
cumin
salt
pepper
Directions:
Chop the sweet potatoes and pork chops into cubes.
Chop the green onions and garlic.
Now comes the easy part – dumping!
Add the sweet potatoes, pork, green onions, garlic, diced tomatoes & chiles, orange juice, cumin, salt, and pepper into the crock pot.

Cook on low for 7 hours. This is the best part of cooking in the crock pot – you get your dinner ready and then you have 7 hours to get lots of stuff done! I cleaned the house, worked out, and even got some time to relax and watch t.v. After 7 hours, dinner’s ready:
(5 minutes before you’re ready to eat, you add in the lime juice and stir it all up).
The stew is warm, yet tastes fresh because of the lime juice. It’s slightly spicy because of the chiles, and has a great, earthy flavor due to the cumin. I will definitely make this again.
WW recommended pairing this stew with a salad of black beans and corn. So I made my own version.
Bella’s Black Bean, Corn, & Grape Tomato Salad
1 cup black beans
1/2 cup fire-roasted corn
1 cup grape tomatoes
2 green onions
2 tsp olive oil (to get those healthy oils in)
a splash of red wine vinegar
salt, pepper, garlic powder
Total: 7 points
You could obviously cut down on the amount of corn and black beans to lighten this up, but I had the Points left, so I made a bigger salad. It was delicious! To be honest, I actually enjoyed it even more than the stew.
